Release Date:

Associate Professor Kosuke Adachi of the Department of Agriculture Facultyreceived the Heisei 22 Fisheries Science Encouragement Award from the Japanese Society of Fisheries Science for his work titled “Biochemical Analysis of Darkening in Seafood.”

In seafood such as shrimp and red sea bream, browning caused by melanin pigments compromises quality; however, many aspects of the mechanism remain unclear, and there is a need for reliable methods to prevent this browning.
Professor Adachi’s research is extremely useful for maintaining the quality of seafood, where appearance is a key factor, and it was also highly regarded for its significance in basic biology.
